In some years, a tiny proportion of other varietals may be used in the blend to retain its style.
Winemaking
The base wines are selected from the purest Chardonnays.
The fermentations take place at low temperature (17-18°C) to preserve this fruit purity. After a slow " prise de mousse" at cellar temperature (10-12°C), the wine is left to rest on its lees. The latter are "shaken" into suspension on a daily basis during 3 months to obtain an optimal harmony. After a gentle filtration, the moderate "dosage" brings the final touch.
Tasting notes
Golden yellow colour with fine and a light bubbles.Aromas of flowers, hazelnuts and almonds.Lively attack, round on the taste, fresh and honey nuances.
Food and wine pairing
This wine will be perfect for aperitif or with shellfish gratin or an avocado and citrus salad. Also very suitable with an apricot pie.

Serve between 6 and 8 °C.
